Who are you?
I’m Dave VanEsselstyn, a longtime Brooklyn resident. I’m seeking to marry my loves of biking around Brooklyn, sharpening knives, and working with clients to build a business that meets their needs. I was the co-founder of Brooklyn Robot Foundry, and am excited to be starting a new venture.
As a home chef, BBQ enthusiast, and tinkerer, I like to keep my knives and tools sharp. Over the years this routine maintenance has become a hobby for me. I began by investing in equipment and sharpening the knives of all my chef friends. But you don't have to be a professional chef to appreciate sharp knives.
You charge by the hour. How many knives can you sharpen in an hour?
About six. It really depends on what condition the knives are in. In my experience, I can meet most family’s knife sharpening needs in an hour. It doesn’t make financial sense for me to do visits that are less than an hour. If you need more than an hour, I can do that and just prorate the charge.
Where will you travel for a house call?
At this point, I’m sticking to Brooklyn, and if you are super far out there in Brooklyn, I may not be the right service for you. Feel free to schedule an appointment though, I’ll take a look, and will cancel if need be.
How should I prepare for a house call, and what should I expect?
When I arrive, we’ll take a look at your knives together and agree on which ones to prioritize. I’ll then need a place to set up my work area - a table or counter, say. It might get a little bit wet.
You are welcome to watch me work, but of course you don’t have to. If there are children in your home, they are welcome to watch as well, but will need to keep a safe distance away.
With each knife, I’ll provide you with a sharpness score both before and after sharpening.
After roughly an hour, I’ll pack up my tools, leaving you with a set of sharp knives.
